Chicken and Asparagus with Penne Pasta

Asparagus, chicken, and penne pasta in a deliciously light and satisfying dish.
Ingredients:
  • 1 pound chicken breast tenderloins
  • 1 pinch garlic salt, or to taste
  • 1 pinch seasoned salt, or to taste
  • 1 pound uncooked penne pasta
  • 2 tablespoons butter
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 pound fresh asparagus, trimmed and cut crosswise into thirds
Instructions:
  • Preheat oven to 375°F (190°C).
  • Line a baking sheet with aluminum foil.
  • Lay out the chicken breast tenderloins on the baking sheet, then generously season with garlic salt and seasoned salt.
  • Bake chicken in the preheated oven until cooked through, about 15 minutes. Allow to cool slightly, then dice tenderloins into bite-size pieces.
  • 1. Bring a large pot of lightly salted water to a rolling boil. Add penne pasta and cook, stirring occasionally, until al dente, about 11 minutes. Drain the pasta.
  • Return the penne to the pot and mix in the butter and Parmesan cheese until the pasta is well coated.
  • Start by gently heating olive oil in a skillet over medium heat. Add asparagus into the sizzling oil and generously sprinkle with garlic salt. Continue cooking and stirring until asparagus is tender, approximately 7 minutes.
  • Place the penne pasta in a large serving bowl, then add the asparagus and chicken tenderloin pieces on top. Gently combine the asparagus and chicken with the pasta before serving.
