Chicken and Broccoli Cobbler

Sourdough chicken and broccoli cobbler topped with crispy cubes - a delicious Thanksgiving casserole.
Ingredients:
  • 1/4 cup butter, melted
  • 3 cups cubed sourdough bread
  • 1/2 cup grated Parmesan cheese
  • 3 cups small fresh broccoli florets
  • 3 cups chopped cooked chicken
  • 1/2 cup chopped drained roasted red bell peppers (from a jar)
  • 1 container (10 oz) refrigerated Alfredo pasta sauce
  • 1/2 cup sour cream
  • 2 tablespoons dry sherry
Instructions:
  • Preheat oven to 400°F and generously coat a 2-quart casserole with cooking spray.
  • In a medium bowl, drench bread cubes with melted butter and generously sprinkle with cheese. Mix thoroughly.
  • Combine the rest of the ingredients in a large bowl. Transfer the chicken mixture into a casserole dish and sprinkle the bread cube mixture over the top.
  • Bake for 30 minutes without cover until bubbly and the topping turns golden brown.
