Chicken and capsicum parcels

Unwrap fragrant, juicy chicken parcels.
Ingredients:
  • 1 leek, halved lengthways, thinly sliced
  • 3 capsicums (red, green, yellow), thinly sliced
  • 4 garlic cloves, thinly sliced lengthways
  • 12 chat potatoes
  • 500g chicken thigh fillets, trimmed, diced
  • 4 sprigs oregano
Instructions:
  • In a large frying pan over medium-low heat, gently heat oil. Add leek, capsicums, and garlic, then cover the pan. Cook, stirring occasionally, for 10 minutes until softened.
  • Place potatoes in a saucepan and cover with cold water. Boil over medium-high heat for 10 to 15 minutes until tender. Drain, season with salt and pepper, and cover to keep warm.
  • Preheat the oven to 200°C. Cut four 40cm pieces of baking paper. Divide the chicken into four portions and place each portion in the center of a piece of baking paper. Season with salt and pepper. Spoon the capsicum mixture over the chicken. Garnish each with a sprig of oregano. Fold the edges of the paper upwards to seal and create parcels.
  • Place the parcels with the seam side facing up on a baking tray. Bake for 30 minutes or until the chicken is cooked through. Serve with potatoes for a delicious meal.
