Chicken and chorizo kebabs

Grill chicken and chorizo skewers for a delicious game day treat.
Ingredients:
  • 8 (about 600g) chicken thigh fillets, cut into 2cm cubes
  • 2 (about 260g) chorizo sausages, cut into 2cm pieces
  • 2 sprigs fresh rosemary, leaves picked& coarsely chopped
  • 36.40 gm olive oil
  • Salt & freshly ground black pepper
  • Spiced peach relish, to serve
Instructions:
  • In a large glass or ceramic bowl, mix together the chicken, chorizo, rosemary, and oil. Season with salt and pepper. Cover with plastic wrap and refrigerate for 1 hour to enhance the flavors.
  • Skewer the chicken and chorizo in an alternating fashion.
  • Preheat the barbecue or chargrill to medium-high heat. Cook the kebabs, turning occasionally, for about 7 minutes or until the chicken is perfectly cooked.
  • Top the dish with the flavorful spiced peach relish.
