Chicken and chorizo minestrone

Hearty chicken and chorizo minestrone soup - a family favorite!
Ingredients:
  • 1 chorizo sausage, finely chopped
  • 1 brown onion, finely chopped
  • 1 carrot, peeled, finely chopped
  • 2 celery sticks, finely chopped
  • 1 zucchini, ends trimmed, finely chopped
  • 400g can diced tomatoes
  • 500ml chicken stock
  • 1 large (about 220g) RSPCA Approved Chicken Breast Fillet
  • 110g risoni
  • 40g spinach leaves, finely shredded
  • Lemon zest, to serve
  • Flat-leaf parsley leaves, to serve
  • Crusty bread, to serve
Instructions:
  • Begin by heating a large saucepan over high heat. Add the chorizo and cook, stirring occasionally, for 5 minutes until beautifully browned. Then, carefully transfer the cooked chorizo to a plate using a slotted spoon.
  • Saute the onion, carrot, celery, zucchini, and garlic in the pan for 5 minutes until the onion softens. Put back the chorizo, then add the tomato, stock, and chicken breast. Bring to a boil, then reduce heat and simmer for 10 minutes until the chicken is cooked through. Remove chicken, shred coarsely.
  • Combine the pasta and shredded chicken in the soup and simmer for 6-7 mins until pasta is tender. Remove from heat and gently fold in the spinach. Season with salt and pepper to taste.
  • Serve the soup in bowls, garnish with lemon zest and parsley, and enjoy with crusty bread.
