Chicken and Chourico Pizza

Spicy Portuguese chourico sausage, chicken, red onion, and banana peppers on a quick and easy pizza crust.
Ingredients:
  • 2 teaspoons olive oil
  • 2 skinless, boneless chicken breast halves - cut into small chunks
  • flour for dusting
  • 1 (13.4 ounce) package room-temperature fresh pizza dough
  • 1 cup tomato sauce
  • 1 tablespoon olive oil
  • 5 cloves garlic, minced
  • 1.5 tablespoons Italian seasoning
  • salt and ground black pepper to taste
  • 0.5 link Portuguese hot chourico sausage - halved lengthwise and sliced into thin half moons
  • 0.25 red onion, sliced thin
  • 0.25 cup banana pepper rings
  • 1 (8 ounce) package shredded mozzarella & cheddar pizza cheese
  • 2 tablespoons grated Parmesan cheese
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C) while you generously coat your pizza pan with a tantalizing mix of olive oil and flour.
  • Warm 2 teaspoons of olive oil in a skillet over medium heat. Sear the chicken in the fragrant oil until cooked through and the juices run clear, for about 5 to 10 minutes. Then, remove from heat and set aside.
  • Sprinkle flour on a clean surface. Roll out the pizza dough to fit your pan. Transfer the dough to the pan.
  • Combine tomato sauce, 1 tablespoon of olive oil, garlic, Italian seasoning, salt, and pepper in a small bowl. Spread the mixture evenly over the dough. Top with chicken, chourico, red onion, banana peppers, pizza cheese, and Parmesan in that order.
  • Bake on the middle rack in the preheated oven until the cheese is lightly browned, approximately 20 minutes. Then broil for an additional 5 minutes.
