Transform leftover chicken into a chic frittata.
Ingredients:
  • 500.00 ml shredded cooked chicken
  • 3 green onions, finely chopped
  • 2 medium zucchini, grated
  • 2 x 125g cans corn kernels, drained
  • 6 eggs
  • 126.25 gm pure cream
  • 82.50 ml grated parmesan cheese
Instructions:
  • In a 26cm frying pan, heat oil over medium heat. Add chicken, green onion, zucchini, and corn. Cook, stirring, until zucchini is soft, about 3 minutes.
  • Preheat the grill to medium while whisking together eggs, cream, cheese, and garlic. Season the mixture with salt and pepper. Pour it over the chicken and cook for 5 to 6 minutes until nearly set. Transfer to the grill and cook for 2 more minutes until golden and fully set. Serve and enjoy!
