Chicken and corn party pies

Elevate your party with nutritious twists on classic dishes.
Ingredients:
  • 250.00 ml finely chopped cooked chicken
  • 2 x 125g cans creamed corn
  • 3 green onions, thinly sliced
  • 82.50 ml grated reduced-fat tasty cheese
  • 32 slices wholemeal bread (see note)
  • Olive oil cooking spray
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced and lightly grease a large baking tray. In a bowl, mix together chicken, corn, onion, and cheese. Season with pepper and stir everything well to combine.
  • Cut out a 9cm round from the center of each bread slice using a round cutter, reserving the center rounds for another use (see tip for leftovers idea).
  • Place a generous spoonful of the chicken mixture in the center of one round. Add another round on top and seal the edges by pinching with your fingertips. Repeat this process with the remaining chicken mixture and bread rounds. Spray with oil and season with pepper before placing on the prepared baking tray.
  • Bake until beautifully golden and crispy, about 20 minutes. Serve.
