Cheesy nachos guaranteed to be a hit at your next party!
Ingredients:
  • 2 avocados
  • 1/2 x 30g sachet Guacamole Seasoning
  • 9.20 gm extra virgin olive oil
  • 6 shortcut bacon rashers, chopped
  • 500.00 ml shredded barbecued chicken
  • 250g cream cheese, chopped
  • 125.00 ml light cream for cooking
  • 64.38 gm milk
  • 1 tsp garlic powder
  • 82.50 ml grated parmesan
  • 200g packet Crunchy Nachips
  • 62.50 ml Pickled Jalapeño Slices
  • 125.00 ml grated cheddar
  • 150g cherry tomatoes, halved
  • 62.50 ml fresh coriander sprigs
  • Sour cream to serve
  • Lime wedges, to serve
Instructions:
  • Combine ripe avocado with a mix of flavorful seasonings, creating a delectable mixture in a bowl. Let it sit.
  • Heat oil in a medium frying pan over medium-high heat. Add bacon and cook, stirring occasionally, for 5 minutes or until browned and crisp. Set aside half of the bacon. Add chicken to the pan with the bacon and cook for 2 minutes, stirring, until heated through.
  • In a small saucepan over medium-low heat, combine cream cheese, cream, milk, and garlic powder. Cook and stir for 6 to 7 minutes until smooth. Add parmesan and continue stirring until melted. Season with salt and pepper, then remove from heat.
  • Arrange Nachips elegantly on a serving platter. Drizzle generously with cheese sauce. Layer with chicken mixture, avocado mixture, jalapeños, bacon, cheddar cheese, tomatoes, and fresh cilantro. Accompany with sour cream and lime wedges for a delightful presentation.
