Nourishing green soup packed with three veggies per serving to keep you satisfied and cozy.
Ingredients:
  • 27.30 gm extra virgin olive oil
  • 2 middle bacon rashers, trimmed, chopped
  • 500g packet frozen peas
  • 1 brown onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1.5 litres Chicken Style Liquid Stock
  • 150.00 gm jasmine rice
  • 250g packet frozen chopped spinach, thawed
  • 100g Danish fetta, crumbled
  • Fresh mint leaves, to serve
Instructions:
  • In a large saucepan over medium-high heat, warm 2 teaspoons of oil. Add bacon and cook until golden and crisp, about 2 to 3 minutes. Drain on paper towel and discard excess fat from the pan.
  • Place peas in a heatproof bowl and cover with boiling water. Allow them to stand for 2 minutes, then drain. Transfer half the peas to a food processor and process until nearly smooth.
  • In a pan over medium heat, heat the remaining oil and sauté the onion and garlic for 3 minutes. Pour in the stock and bring to a boil over high heat. Stir in the rice and processed peas and simmer for 10 minutes until the rice is tender. Add the spinach and remaining peas and bring to a boil. To serve, top the soup with bacon, feta, and mint.
