Quick and easy vegan Spanish rice with hearty brown rice and just the right amount of spice for a delicious one-pot weeknight meal.
Ingredients:
  • 1 cup uncooked brown rice
  • 0.5 red bell pepper, chopped
  • 2 teaspoons crushed garlic
  • 1 (10 ounce) can diced tomatoes
  • 2 teaspoons chili powder
Instructions:
  • In a deep skillet over medium heat, warm oil. Add rice, bell pepper, onion, and garlic. Sauté until rice is golden brown and onion is soft, around 5 minutes. Mix in water and diced tomatoes. Season with chili powder and salt. Cover and cook until rice is done, about 30 minutes.
