Indian curry staple: fragrant yellow rice.
Ingredients:
  • Good pinch of saffron threads
  • 18.20 gm olive oil
  • 1 onion, finely chopped
  • 300g basmati rice
  • 40.00 ml roughly chopped coriander
Instructions:
  • Grind the saffron and a generous pinch of sea salt in a mortar and pestle until fragrant. Let it sit aside.
  • In a saucepan over medium heat, sauté onion in heated oil for 6-8 minutes until softened. Stir in rice. Pour in 650ml boiling water, bring to a boil. Mix in saffron, reduce heat to low, cover, and simmer for 20 minutes, stirring occasionally, until rice is tender. Allow to cool, then fluff with a fork. Top with fresh coriander before serving.
