Yellow Rice and Sofrito Beans with Jammy Eggs

Saffron rice paired with flavorful sofrito beans, topped with soft-boiled eggs, perfect for any meal.
Ingredients:
  • 2 cups water
  • 1 cup long-grain white rice, rinsed
  • 1 teaspoon sazon seasoning with coriander and annatto (such as Goya®)
  • 1 (15 ounce) can hominy, drained
  • 0.25 cup chopped fresh cilantro
  • 0.25 cup sliced green onions
  • 6 large eggs
  • 2 (15 ounce) cans black beans, drained
  • 0.5 cup sofrito
  • 0.25 teaspoon salt
  • cracked black pepper
Instructions:
  • Combine water, rice, and sazón seasoning in a saucepan. Bring to a boil, then lower heat and simmer covered for 15 minutes. Remove from heat, let sit covered for an additional 10 minutes. Stir in hominy, cilantro, and green onions. Enjoy!
  • Fill a large saucepan halfway with cold water and bring it to a gentle boil. Using a slotted spoon, carefully lower the eggs into the water. Let them boil for 8 minutes for jammy yolks. Remove the eggs with a slotted spoon and let them cool slightly. Once cool enough, gently tap the eggs on the counter and peel off the shells before cutting them in half.
  • Combine black beans, flavorful sofrito, and a pinch of salt in a small saucepan. Warm over medium-low heat for approximately 3 minutes until heated through.
  • Spoon rice and bean mixtures into 6 bowls, place eggs on top, and generously sprinkle with black pepper.
