Instant brown rice stir-fry with vibrant veggies and tropical pineapple in a flavorful sauce.
Ingredients:
  • 2 cups vegetable broth
  • 2 cups chicken broth
  • 0.33333334326744 cup pineapple juice
  • 2.5 cups instant brown rice
  • 0.33333334326744 cup raisins
  • 2 tablespoons ground turmeric
  • 1 tablespoon vegetable oil
  • 1 zucchini, chopped
  • 0.5 cup chopped fresh mushrooms
  • 0.5 red bell pepper, chopped
  • 0.5 yellow bell pepper, chopped
  • 2 tablespoons honey
  • 0.25 cup lemon juice
  • 1 teaspoon minced fresh ginger root
  • 1 pinch ground black pepper
  • 0.5 fresh pineapple - peeled, cored and chopped
Instructions:
  • In a large saucepan, combine vegetable broth, chicken broth, and pineapple juice. Bring to a boil over high heat. Add brown rice, raisins, turmeric, and cumin. Bring back to a boil, then reduce heat to medium-low. Cover and simmer until rice is tender and liquid is absorbed, about 10 minutes.
  • In a skillet over medium heat, sauté 1 tablespoon of oil with onion, zucchini, mushrooms, red and yellow pepper, stirring occasionally until vegetables are softened, about 5 minutes.
  • Combine honey, 1 tbsp oil, lemon juice, ginger, and black pepper in a bowl. Mix this sweet and tangy blend with the cooked vegetables and pineapple into the rice. Bring the dish back to a boil, and serve it piping hot.
