Satisfying vegan paella with rice, artichokes, and peas is a flavorful twist on the Spanish classic.
Ingredients:
  • 2 cups boiling water
  • 1 cup white rice
  • 3 cloves garlic, minced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 tomato, diced
  • 2 cups vegetable broth
  • 1 tablespoon paprika
  • 1 teaspoon ground turmeric
  • 1 cup peas
  • 1 cup drained and quartered canned artichoke hearts
Instructions:
  • Combine boiling water and rice in a bowl, allowing it to sit for 20 minutes. Then, drain the rice.
  • In a large skillet over medium heat, sauté onion and garlic in olive oil until onion is transparent for about 5 minutes. Stir in green bell pepper, red bell pepper, and tomato; continue cooking and stirring until peppers are slightly tender, about 3 minutes.
  • Combine rice and vegetable broth with the onion-pepper mixture and bring to a flavorful boil. Lower the heat and let it simmer, then sprinkle in paprika, salt, and turmeric. Cover and let it simmer for 20 minutes until the rice is tender. Finally, mix in peas and artichoke hearts, and cook for another minute until warm.
