Vegan paella bursting with flavor sans meat.
Ingredients:
  • 100g swiss brown mushrooms, quartered
  • 4 flat mushrooms, each cut into 3 slices
  • 1 brown onion, halved, sliced
  • 3 garlic cloves, chopped
  • 7.50 gm smoked paprika
  • 20.00 ml finely chopped fresh oregano, plus extra leaves to serve
  • 20.00 ml finely chopped flat-leaf parsley, plus extra to serve
  • Large pinch of saffron threads
  • 300.00 gm medium-grain white rice
  • 69.38 gm tomato paste
  • 765.00 gm chicken style liquid stock
  • 4 mini capsicums, halved lengthways, seeds removed
  • 250.00 ml edamame, thawed, peeled
  • 125g cherry tomatoes, halved
  • Lemon wedges, to serve
Instructions:
  • In a large, deep frying pan, heat oil over medium-high heat. Add mushrooms and onion and cook for 5 minutes until starting to brown. Stir in garlic, paprika, oregano, parsley, and saffron, and cook for 1 more minute until fragrant.
  • - Add rice and cook while stirring for 1 minute. - Mix in tomato paste, stir well. - Pour in stock and bring to a simmer. Season with salt and pepper. - Top with capsicum, then reduce heat to low. Cover and cook for 10 minutes. - Sprinkle with edamame. Cover and cook for an additional 5 minutes or until rice is tender.
  • Garnish with fresh tomato slices and generously sprinkle with additional oregano and parsley. Accompany with lemon wedges for a burst of citrus flavor.
