Warm potato salad with capers & rocket

Ingredients:
  • 1.5 kg mixed potatoes, such as new, Charlotte, Kipfler
  • 1 small bunch of rocket
  • 8 tablespoons extra virgin olive oil
  • 4 tablespoons red wine vinegar
  • 2 tablespoons capers
Instructions:
  • Prepare the potatoes by scrubbing some and leaving them whole, while peeling and cutting the rest into equal sizes. Boil them in salted water until tender, approximately 20 minutes. Drain and transfer to a large serving bowl. Mix in the remaining ingredients while the potatoes are still warm, and season generously with sea salt and freshly ground black pepper before serving promptly on plates.
