Super seed schnitzel with parmesan cauliflower rice recipe

Healthy schnitzel with cauliflower rice, ready in 17 minutes and only 500 calories per serving.
Ingredients:
  • 35g (1/3 cup) mixed seeds (chia, hemp and sesame seeds)
  • 50g (1/4 cup) polenta
  • 20g (1 ⁄4 cup) finely grated parmesan
  • 5.00 gm arrowroot (tapioca flour)
  • 2 large (about 300g each) chicken breasts, halved diagonally
  • 36.40 gm extra virgin olive oil
  • Steamed green beans, to serve
  • 18.20 gm extra virgin olive oil
  • 3 green shallots, thinly sliced, plus extra, to serve (optional)
  • 2 x 250g pkt cauliflower rice
  • 1 large lemon, rind finely grated, halved
  • 25g (1/3 cup) finely grated parmesan
Instructions:
  • Mix together the seeds, polenta, and parmesan on a plate. Season the mixture. In a shallow bowl, gently whisk together the egg, 1 tablespoon of water, and arrowroot. Dip the chicken pieces first in the egg mixture, then coat them in the seed mixture by pressing down gently.
  • In a large non-stick frying pan over medium heat, heat the oil until shimmering. Cook the chicken, turning occasionally, for 6-7 minutes or until golden and cooked through. Place on a paper towel-lined plate. Use another paper towel to wipe the pan clean.
  • Heat oil in a pan over high heat. Add shallot and garlic, cook for 1 minute until fragrant. Add cauliflower rice and stir for 1 minute until coated. Mix in lemon zest, juice from half a lemon, and cook for 2 minutes until tender. Stir in parmesan until combined. Season with salt and pepper. Enjoy!
  • To enjoy, plate the parmesan cauliflower rice alongside the super seed schnitzels, green beans, the other half of the lemon, and additional shallots, if desired.
