Boost your health with a powerhouse blend of LSA meal, chia seeds, and quinoa.
Ingredients:
  • 125.00 ml Brand White Quinoa
  • 250.00 gm boiling water
  • 375.00 gm self-raising flour
  • 125.00 ml Brand LSA Meal
  • 40.00 ml Brand Black Chia seeds
  • 2.40 gm salt
  • 60g butter, chopped, plus extra to serve
  • 257.50 gm skim milk, plus extra to brush
  • 40.00 ml pepitas
Instructions:
  • Add the quinoa to a heatproof bowl and pour boiling water over it. Allow it to rest for 20 minutes. Then, drain thoroughly.
  • Preheat the oven to 200C (180C fan-forced) and prepare a greased and floured baking tray. In a large bowl, mix flour, LSA meal, chia seeds, and salt. Rub in the butter using your fingertips until combined. Create a well in the mixture, then add milk and quinoa. Stir with a knife until the dough comes together and pulls away from the sides of the bowl.
  • Transfer the dough onto a lightly floured surface and divide it into 4 pieces. Shape each piece into an 8cm round damper and place on the prepared tray. Brush with extra milk, sprinkle with pepitas, and bake for 40 minutes or until the damper sounds hollow when tapped. Serve warm with butter.
