Chicken and corn sandwich stack recipe

Whip up a speedy chicken and corn sandwich in just 10 minutes for a satisfying lunch.
Ingredients:
  • 120g cream cheese
  • 62.50 ml creamed corn
  • 160g chicken breast
  • 2 x 125g cans corn kernels, rinsed, drained
  • 150g mayonnaise
  • 2 celery sticks, trimmed, finely chopped
  • 12 slices Wonder Active Low GI Soft White bread
  • 2 Lebanese cucumbers, peeled into ribbons
  • 8 butter lettuce leaves
Instructions:
  • Mix the cream cheese and creamed corn together in a bowl.
  • In a separate bowl, mix together the chicken, corn kernels, mayonnaise, and celery.
  • Lay 4 slices of bread on a tidy work surface. Smother with creamy corn blend, then layer with cucumber and another slice of bread. Add lettuce, chicken mix, and the remaining bread on top. Slice each sandwich stack in half.
