Chicken and corn soup

Try our comforting chicken and corn soup for a quick, delicious, and healthy meal.
Ingredients:
  • 20g butter
  • 2 garlic cloves, finely chopped
  • 5 chicken thigh fillets, trimmed and sliced
  • 1 litre chicken style liquid stock
  • 2 x 420g cans creamed corn
  • 2 x 125g cans corn kernels, drained
  • 16.00 gm brown sugar
  • 58.75 gm sour cream
  • salt and cracked black pepper
  • 82.50 ml chopped coriander leaves
Instructions:
  • In a large saucepan over medium heat, melt butter. Stir in garlic and cook for 1 minute. Add chicken and cook for 3-4 minutes. Mix in stock, creamed corn, corn kernels, and sugar. Bring to a boil, then simmer for 15 minutes until chicken is tender and desired consistency is reached.
  • Stir in the sour cream, salt, and pepper off the heat. Garnish with fresh coriander and serve.
