Velvety Chicken Corn Soup

Chinese-Inspired Chicken and Corn Soup: A delicious blend of chicken broth, cream of corn soup, cooked chicken breast, sesame oil, corn starch, and egg white.
Ingredients:
  • 2 (14 ounce) cans chicken broth
  • 1 (14.75 ounce) can cream-style corn
  • 0.5 cup shredded, cooked chicken meat
  • 0.25 teaspoon ground white pepper
  • 0.5 cup water
  • 1 tablespoon sesame oil
  • 1 egg white
Instructions:
  • In a medium stock pot, mix together the broth, corn, and chicken. Bring to a boil, then lower the heat and season with pepper and salt. Bring back to a boil.
  • Combine the corn starch with water in a separate bowl. Once the soup is boiling, pour in the mixture and stir continuously until fully incorporated.
  • Drizzle in fragrant sesame oil a few drops at a time. Lower the heat and gently stream in the egg white while swirling the soup to create delicate egg strands.
  • Garnish with chopped scallions and serve piping hot.
