Creamy curry yogurt and sour cream dressing elevates honeydew melon, grapes, chicken, and water chestnut salad. Serves ten.
Ingredients:
  • 1 honeydew melon
  • 6 cups cubed, cooked chicken meat
  • 2 cups seedless grapes
  • 1 (8 ounce) can sliced water chestnuts
  • 0.5 cup plain yogurt
  • 1.5 teaspoons curry powder
  • salt and pepper to taste
Instructions:
  • Halve the melon, scoop out the seeds, and use a melon baller to create melon balls, then transfer them into a large salad bowl.
  • Combine chicken, celery, and grapes with melon. Include water chestnuts optionally.
  • Combine sour cream, yogurt, and curry powder in a small bowl. Fold the mixture into the salad, then season to taste with salt and pepper. Serve and enjoy!
