Light and refreshing green salad with vibrant dressing, ideal for a summer evening.
Ingredients:
  • Olive oil spray
  • 2 (about 500g) single chicken breast fillets
  • 1 bunch watercress, washed, dried, sprigs picked
  • 1 green oakleaf lettuce, washed, dried, leaves torn
  • 1 ripe pear, quartered, cored, thinly sliced
  • 50g onion sprouts
  • 125.00 ml fresh continental parsley leaves
  • 42.00 gm fresh orange juice
  • 20.00 ml white balsamic vinegar
  • 20.00 ml chopped fresh tarragon
  • 11.80 gm wholegrain mustard
  • 7.20 gm honey
Instructions:
  • In a hot non-stick frying pan lightly coated with olive oil spray, sear the chicken for 3-4 minutes on each side until fully cooked. Let it rest for 5 minutes, then slice thinly across the grain.
  • Combine watercress, lettuce, pear, sprouts, and parsley in a bowl. Whisk orange juice, vinegar, oil, tarragon, mustard, and honey in a jug. Season with pepper.
  • Combine the chicken with the watercress mixture and drizzle the dressing on top. Gently mix everything together. Portion into serving bowls and enjoy.
