Chicken and Peas Au Gratin Casserole

Cheesy chicken and pea casserole with bread, in a creamy white sauce.
Ingredients:
  • 2 tablespoons olive oil
  • 3 cups cubed skinless, boneless chicken
  • 4 cups torn bread pieces
  • 1 cup shredded Cheddar cheese
  • 0.25 cup butter, melted
  • 2 cups frozen peas
  • 0.25 cup butter
  • 0.5 cup all-purpose flour
  • 3 cups milk
  • 2 teaspoons salt
  • 0.5 teaspoon black pepper
Instructions:
  • Preheat the oven to 350°F (175°C) for that perfect bake.
  • In a skillet over medium heat, heat olive oil. Cook chicken until no longer pink in the center and juices run clear, about 5-7 minutes. Drain and set aside.
  • Combine the bread, Cheddar cheese, and 1/4 cup of melted butter in a bowl, then spread half of the mixture in the bottom of a 9x13-inch baking dish. Layer the peas and chicken on top of the bread mixture.
  • In a saucepan over medium heat, melt 1/4 cup of butter. Stir in flour, milk, salt, and pepper until smooth and thickened, about 5 to 7 minutes. Pour the sauce over the casserole and sprinkle with the remaining bread mixture.
  • Bake in the oven until the top turns golden brown, for about 30-40 minutes.
