Chicken and Sugar Snap Peas Pasta Salad

Transform noodles and peas into a hearty Caesar chicken salad in just 20 minutes.
Ingredients:
  • 3 cups uncooked mini lasagna (mafalda) noodles (6 oz)
  • 2 cups fresh sugar snap peas, trimmed, halved
  • 3/4 cup creamy Caesar dressing
  • 2 tablespoons chopped fresh mint
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon salt
  • 2 cups chopped deli rotisserie chicken (from 2-lb chicken)
  • 1/4 cup chopped red onion
Instructions:
  • Cook the noodles as instructed on the package in a 3-quart saucepan, adding peas during the last minute of cooking. Then, rinse the noodles and peas with cold water and drain.
  • Combine the dressing, mint, vinegar, and salt in a large bowl. Add in the chicken, onion, noodles, and peas. Enjoy right away or refrigerate until serving.
