Succulent chicken, plump shrimp, and earthy mushrooms bathed in a luxurious white wine reduction.
Ingredients:
  • 5 tablespoons olive oil, divided
  • 1 (8 ounce) package sliced fresh mushrooms
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1 pound large shrimp, peeled and deveined
  • 1.25 teaspoons salt, divided
  • 4 skinless, boneless chicken breast halves - cut into 1 inch cubes
  • 3 tablespoons all-purpose flour, divided
  • 0.25 cup dry white wine
  • 1.25 cups water
  • ground black pepper to taste
Instructions:
  • In a large skillet over medium-high heat, sauté mushrooms in 1 tablespoon of oil until golden. Remove the mushrooms from the skillet using a slotted spoon and set them aside.
  • Drizzle an additional 2 tablespoons of oil in the skillet. Sauté the onion, garlic, and shrimp until they turn opaque. Transfer the mixture from the skillet to the mushrooms.
  • Combine 2 tablespoons of flour and 3/4 teaspoon of salt in a shallow dish. Coat the chicken with the flour mixture. In a skillet, heat 1 tablespoon of oil and cook the chicken for 3 to 5 minutes until cooked through. Transfer the chicken to the mushroom and shrimp mixture.
  • In a skillet, warm up 1 tablespoon of oil then add in 1 tablespoon of flour. Sauté for about 30 seconds until golden brown, stirring constantly. Pour in wine, 1/2 teaspoon salt, and water. Bring to a boil for 1 minute.
  • Lower the heat to medium low and add the shrimp and chicken mixture back into the skillet. Let it simmer for approximately 10 minutes, then season with pepper before serving.
