Create a delicious Thai chicken meal for two.
Ingredients:
  • 42.00 gm lime juice
  • 20.00 gm caster sugar
  • 1 small red chilli, seeds removed, finely chopped
  • 300g skinless chicken breast fillet, thinly sliced
  • 150g snow peas, ends trimmed
  • 1/2 small red onion, finely sliced
  • 125.00 ml coriander leaves
  • 125.00 ml mint leaves
Instructions:
  • Prepare the dressing by mixing lime juice, fish sauce, sugar, and chili in a small bowl. Let it sit for later use.
  • In a sizzling wok, quickly stir-fry chicken in hot oil for 1-2 minutes. Toss in snow peas and cook for another 1-2 minutes.
  • In a bowl, combine onions and fresh herbs with the dressing, then mix well.
