Fresh zucchini, yellow squash, and tomato sautéed with chicken, creating a vibrant and flavorful dish.
Ingredients:
  • 4 skinless, boneless chicken breast halves
  • 0.25 teaspoon ground black pepper
  • 1 tablespoon butter
  • 1 tablespoon vegetable oil
  • 0.75 pound yellow squash, sliced
  • 0.75 pound zucchinis, sliced
  • 1 medium tomato - peeled, seeded and chopped
Instructions:
  • Heat butter and oil in a large nonstick skillet over medium-high heat. Season chicken with half the salt and pepper, then sear until golden brown on both sides, about 2 minutes each. Remove chicken to a large plate and cover to keep warm.
  • Drain the excess fat from the pan and toss in the squash, zucchini, and tomato. Season with the remaining salt and pepper. Sauté over medium-high heat until the squash slightly softens, approximately 3 minutes. Lower the heat, then place the chicken back into the pan. Cover partially and simmer until the squash is tender and the chicken is fully cooked but still moist, about 5 more minutes.
  • Place the chicken on a serving platter, cover it with foil to keep it warm. Increase the heat to high. Cook the vegetable mixture, stirring frequently, until most of the liquid has evaporated, approximately 2 minutes. Arrange the vegetables around the chicken and serve.
