Vibrant summer chicken salad for a refreshing lunch.
Ingredients:
  • 27.30 gm extra-virgin olive oil
  • 600g chicken breast fillets, trimmed
  • 1 baby cos lettuce, leaves torn
  • 1 red capsicum, cut into 1cm pieces
  • 1 telegraph cucumber, diced
  • 420g can sweet corn kernels, drained
  • 1 orange, rind finely grated, juiced
  • 40.00 ml chopped chives
Instructions:
  • Preheat your barbecue grill to medium-high heat. Drizzle 2 teaspoons of oil over the chicken, ensuring it's evenly coated. Season with salt and pepper. Grill the chicken for 5 minutes on each side or until it's fully cooked. Transfer the chicken to a plate, cover it with foil, and let it rest for 5 minutes before slicing it thickly.
  • In a large bowl, mix together lettuce, bell pepper, cucumber, and corn. In a separate container, whisk orange zest, 1/4 cup orange juice, chives, and the remaining 1 tablespoon of oil. Season with salt and pepper. Drizzle half of the dressing over the salad and mix well.
  • Plate the salad, then layer on the chicken and drizzle the remaining dressing over the top. Enjoy your delicious meal!
