Chicken and sweetcorn soup

Cozy winter soup that warms the soul. Pair with bread or noodles for a satisfying meal.
Ingredients:
  • 1 litre 1 litre chicken style liquid stock
  • 420g can creamed corn
  • 125g can corn kernels, drained, rinsed
  • 3 green onions, thinly sliced
  • 500.00 ml shredded cooked chicken
  • 10.60 gm soy sauce
  • 22.00 gm sweet chilli sauce
  • 2 egg whites, lightly beaten
  • 1/2 tsp sesame oil
Instructions:
  • In a saucepan over medium-high heat, combine stock, garlic, creamed corn, corn kernels, half of the onion, and 1 cup of cold water. Bring to a boil, then reduce heat to low, cover, and simmer for 5 minutes. Add chicken, soy sauce, and sweet chili sauce. Stir well and let it simmer for an additional 10 minutes until heated through.
  • Combine the egg white and oil slowly into the mixture. Distribute the mixture evenly between bowls and sprinkle the remaining onion on top. Serve and enjoy.
