Creamy chicken and corn soup

Elevate your soup game with a comforting chicken and corn soup.
Ingredients:
  • 60g butter
  • 4 green onions, sliced
  • 20.00 ml fresh thyme leaves
  • 125.00 ml plain flour
  • 1 quantity chicken stock with chopped chicken (see related recipe)
  • 126.25 gm pure cream
  • 420g can super sweet corn kernels, drained
Instructions:
  • In a large saucepan over medium-high heat, melt butter. Add onion and thyme, cook until onion is softened, about 2 minutes. Stir in flour, cook for 1 minute. Gradually pour in 2 litres of stock and 2 cups of cold water. Cover and bring to a boil.
  • Lower the heat to medium. Introduce cream, corn, and 4 cups of chopped chicken. Simmer, stirring occasionally, for 10 minutes until the soup slightly thickens. Season with salt and pepper. Serve and enjoy!
