Chicken and vegetable spring rolls

Delicious homemade baked treats that are both enjoyable to prepare and delightful to savor!
Ingredients:
  • 300g chicken mince
  • 1/4 Chinese cabbage (wombok), shredded (see note)
  • 1 carrot, peeled, grated
  • 1 zucchini, grated
  • 2 green onions, thinly sliced
  • 125.00 ml grated tasty cheese
  • 1 egg, lightly beaten
  • 250g spring roll pastry
  • olive oil cooking spray
  • sweet and sour dipping sauce, to serve
Instructions:
  • Preheat the oven to 200°C. Line 2 large baking trays with baking paper. In a big bowl, combine mince, cabbage, carrot, zucchini, onion, cheese, and egg. Mix thoroughly with clean hands.
  • Lay a spring roll wrapper diagonally in front of you. Spoon 2 tablespoons of filling down the center. Fold the corner over the filling, then fold the sides and roll tightly. Moisten the remaining corner with water to seal. Place the roll seam side down on a baking tray. Repeat process with the rest of the wrappers, filling, and water. Lightly spray the rolls with oil before baking.
  • Bake until golden and crisp, around 25 to 30 minutes. Serve alongside a delicious dipping sauce.
