Transform chicken skewers with peanut sauce for a global and irresistible taste.
Ingredients:
  • 15 button mushrooms, halved
  • 1 small green capsicum, seeds removed and roughly chopped
  • 1 small red capsicum, seeds removed and roughly chopped
  • 3 chicken breast fillets, trimmed and cut into 3 cm cubes
  • 187.50 ml crunchy peanut
  • 165ml coconut milk
  • 42.00 gm soy sauce
  • 1.25 gm ground cumin
Instructions:
  • Submerge a dozen bamboo skewers in water for 10 minutes to safeguard them from burning on the grill.
  • In a small saucepan over medium-low heat, combine peanut butter, soy sauce, cumin, and coconut milk. Stir for 4 minutes until smooth and heated. Cover to keep warm.
  • Pat dry the skewers. Skewer the chicken cubes, mushrooms, and capsicum, alternating them on the skewers.
  • Preheat a barbecue hot plate or grill to medium-high heat. Generously oil the surface, then place the skewers on. Grill for 4 minutes on each side or until the chicken is fully cooked. Enjoy the skewers with a side of warm peanut sauce.
