Savor our flavorful Chicken Biryani for cozy winter dinners.
Ingredients:
  • 18.40 gm vegetable oil
  • 500g chicken thigh fillets, trimmed, quartered
  • 1 medium brown onion, halved, thinly sliced
  • 1 garlic clove, crushed
  • 2cm piece ginger, peeled, finely grated
  • 115.50 gm balti curry paste
  • 300.00 gm Basmati rice
  • 1 cinnamon stick
  • 510.00 gm chicken style liquid stock
  • 250.00 ml thick plain yoghurt
  • 1 Lebanese cucumber, deseeded, grated
  • 1.25 gm ground cumin
  • Toasted flaked almonds, to serve
Instructions:
  • In a heavy-based saucepan over medium-high heat, heat oil. Brown chicken by cooking for 5 minutes, then transfer to a plate. Cook onion, garlic, and ginger until softened, for about 2-3 minutes. Stir in curry paste and cook until fragrant for 1 minute. Add rice and stir to coat.
  • In a large pot, combine cinnamon, stock, and 1 cup of cold water. Bring to a boil, then add the chicken back in. Lower the heat, cover, and simmer for 20 minutes until the rice is tender and the chicken is fully cooked. Remove and discard the cinnamon before serving.
  • Mix together yoghurt, cucumber, and cumin in a bowl. Sprinkle almonds and coriander over the biryani. Serve with the yoghurt mixture on the side.
