Satisfying pot pie loaded with juicy chicken, veggies, and creamy sauce, topped with fluffy biscuit dough.
Ingredients:
  • 0.33333334326744 cup butter
  • 1 onion, chopped
  • 0.33333334326744 cup all-purpose flour
  • 1.5 cups chicken broth
  • 0.66666668653488 cup milk
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 cup frozen green peas
  • 1 cup frozen diced carrots
  • 2 cups cooked, shredded chicken meat
  • 2 cups all-purpose flour
  • 2.5 teaspoons baking powder
  • 0.75 teaspoon salt
  • 5 tablespoons shortening
  • 0.75 cup milk
Instructions:
  • Preheat your oven to 450°F (230°C) and generously butter a 2-quart casserole dish.
  • In a large saucepan, sauté chopped onion in butter until softened. Stir in flour and cook for 1 minute. Pour in chicken broth and milk and bring to a boil while stirring. Reduce heat and simmer for 2 minutes. Season with salt and pepper, then add frozen peas, carrots, and cooked chicken. Transfer mixture to a casserole dish.
  • Combine 2 cups of flour, baking powder, and 3/4 teaspoon of salt in a medium bowl. Incorporate shortening until mixture is crumbly. Gently fold in milk until dough is moistened, then spoon by dollops over chicken mixture.
  • Bake at 450 degrees F (230 degrees C) for 12 to 15 minutes until biscuits are golden brown and cooked on the bottom. To avoid spills, place aluminum foil under the pan.
