Zesty Italian chicken tomato sauce over rotini pasta, sprinkled with Parmesan cheese.
Ingredients:
  • 1 tablespoon vegetable oil
  • 3 skinless, boneless chicken breast halves - cut into 1 inch cubes
  • 1 white onion, chopped
  • 2 cloves garlic, finely chopped
  • 1 (28 ounce) can peeled and crushed tomatoes
  • 4 button mushrooms, chopped
  • 0.5 teaspoon Italian seasoning
  • 0.5 teaspoon white sugar
  • 4 cups uncooked rotini pasta
  • 0.25 cup grated Parmesan cheese for topping
Instructions:
  • In a large skillet over medium heat, cook chicken, onion, and garlic in oil until chicken is almost cooked through, about 10 minutes. Add crushed tomatoes, mushrooms, and Italian seasoning. Stir occasionally and cook for an additional 5 minutes.
  • Lower the heat, incorporate the sugar, and let it simmer for a minimum of 15 minutes.
  • While eagerly waiting, bring a generously salted large pot of water to a boil. Cook rotini until perfectly al dente, around 8 minutes. Drain and get ready to enjoy!
  • Top rotini with flavorful chicken mixture and a generous sprinkle of grated Parmesan cheese before serving.
