Elevate your dinner with an easy and wallet-friendly gourmet stuffed chicken breast recipe.
Ingredients:
  • 225g marinated goat's feta*, drained
  • 60.00 ml chopped marinated semi-dried tomatoes (oil reserved)
  • 40.00 ml chopped basil leaves
  • 6 free-range chicken breasts, with skin (wingbone attached, optional)
  • 350g vine-ripened truss tomatoes
Instructions:
  • Preheat the oven to 180°C. Combine feta, semi-dried tomatoes, and basil in a small bowl. Season with salt and pepper.
  • Starting from the tapered end of the breast, gently loosen the skin from the breast to make a pocket. Stuff each breast with the feta mixture under the skin. Put the chicken skin-side up in a roasting pan, then coat with reserved oil and season generously.
  • Roast in the oven for 20 minutes until chicken is golden and cooked. Then add tomatoes to the pan and roast for another 5 minutes until tomatoes are softened.
