Elevate chicken with mushroom, pepper, and tomato medley over creamy mashed potatoes for a low-fat, flavorful twist!
Ingredients:
  • 0.75 pound red potatoes, cut into 1-inch chunks
  • 1.5 cups small fresh cauliflower florets
  • 4 (4 ounce) boneless skinless chicken breast halves
  • 0.5 cup KRAFT Lite Balsamic Vinaigrette Dressing
  • 1 (8 ounce) package sliced fresh mushrooms
  • 1 green bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 (14.5 ounce) can Italian-style diced tomatoes, undrained
  • 0.5 cup PHILADELPHIA Chive & Onion 1/3 Less Fat than Cream Cheese
  • 0.25 cup chopped fresh basil
Instructions:
  • Simmer potatoes and cauliflower in a large pot of boiling water for about 20 minutes, or until they are fork-tender.
  • Cook the chicken in a large nonstick skillet, sprayed with cooking spray, over medium heat for 3 to 4 minutes on each side until golden brown. Transfer to a plate and cover to keep warm.
  • Combine dressing, mushrooms, and peppers in a skillet; sauté for 6 minutes. Stir in tomatoes and simmer for 8 minutes. Add chicken back to the skillet and spoon sauce over it. Simmer for 3 minutes or until chicken reaches an internal temperature of 165 degrees F.
  • Drain the potato mixture, then return it to the pan. Stir in reduced-fat cream cheese and mash until the potatoes are fluffy. Top with chicken, vegetables, and basil before serving.
