Chicken Caesar salad

Light and healthy twist on classic chicken Caesar salad, lower in fat.
Ingredients:
  • 1/2 40cm Turkish pide (bread), cut into 2cm cubes
  • 500g chicken tenderloins
  • 1 250g pkt rindless shortcut bacon, excess fat trimmed
  • 1 285g pkt cos lettuce leaves
  • 60ml (1/4 cup) light caesar dressing
  • 20g (1/4 cup) shredded parmesan
Instructions:
  • Preheat the oven to 200°C. Bake the pide on a baking tray for about 10 minutes until it turns light brown and crisp.
  • Heat a large non-stick frying pan over high heat. Sear the chicken for 2 minutes on each side until golden and cooked through. Slice the chicken thickly across the grain and transfer to a plate.
  • In the same pan, cook the bacon over medium heat for about 3 minutes until crispy and golden brown. Transfer the cooked bacon to a plate lined with paper towel and roughly chop it.
  • In a large bowl, toss together chicken, bacon, lettuce, and pide. Drizzle with dressing, sprinkle with parmesan, and serve right away.
