Elevate your dish with a homemade Caesar dressing for a gourmet touch.
Ingredients:
  • 1 small baguette, thinly sliced
  • Olive oil cooking spray
  • 4 middle bacon rashers, trimmed, chopped
  • 1 baby cos lettuce, leaves separated, torn
  • 1000.00 ml shredded cooked chicken
  • 125.00 ml shaved parmesan
  • 2 medium-boiled eggs, quartered
  • 125.00 ml low-fat yoghurt
  • 39.60 gm low-fat mayonnaise
  • 11.80 gm wholegrain mustard
Instructions:
  • Preheat your oven to 220°C/200°C fan-forced. Line a large baking tray with parchment paper. Arrange bread slices in a single layer on the tray and lightly spray them with oil. Bake for 5-7 minutes, flipping halfway through, until beautifully golden and crispy.
  • Prepare the Caesar dressing by mixing yoghurt, mayonnaise, mustard, and 2 teaspoons of warm water in a small bowl. Season to taste.
  • Preheat a non-stick pan over high heat. Add bacon and stir occasionally for 3 to 4 minutes until crispy. Drain on paper towel-lined plate.
  • In a large bowl, combine lettuce, croutons, bacon, chicken, and parmesan. Toss together until mixed. Transfer the mixture to plates and garnish with egg. Finish by drizzling with dressing before serving.
