Elevate Caesar salad with juicy grilled chicken breast for a satisfying main course.
Ingredients:
  • 4 rashers bacon, rind removed, cut into 2cm pieces
  • 2 slices white bread, cut into 1cm cubes
  • 4 Free Range Chicken Breast
  • leaves from 2 baby cos or 1 large cos lettuce
  • 4 eggs, hard-boiled, cut into wedges
  • 247.50 gm whole-egg mayonnaise
  • 42.00 gm lemon juice
  • 40.00 ml grated parmesan cheese
  • 6.10 gm Worcestershire sauce
  • 5.90 gm Dijon mustard
  • 4 anchovy fillets
  • 1 garlic clove
Instructions:
  • Fry bacon in a non-stick pan until crisp. Place on a paper towel to drain. Toast bread in the same pan for 3 minutes until golden and crisp. Transfer to a plate with bacon.
  • Lower the heat to medium, place the chicken in the pan, and sear each side for 4 minutes or until fully cooked. Let it rest, covered, for 10 minutes before slicing the chicken diagonally.
  • For the dressing: Combine all ingredients in a food processor and blend until smooth. Transfer the mixture to a bowl, cover, and chill in the refrigerator.
  • Prepare and pat dry fresh cos lettuce leaves. Present beautifully in a serving bowl. Layer with chicken, bacon, bread, and egg. Drizzle generously with dressing. Season with salt and pepper to taste before serving.
