Indulge in our light Caesar salad with turkey bacon and creamy dressing - a guilt-free twist on the classic favorite.
Ingredients:
1 (about 200g) single chicken breast fillet
1egg
50g rindless bacon rashers, cut crossways into thin strips
30cm baguette (French breadstick), diagonally cut into 1cm-thick slices
1baby cos lettuce, leaves separated, washed, dried
150ml Caesar salad dressing
Instructions:
Heat a non-stick frying pan over medium-high heat. Cook the chicken for 4-5 minutes on each side until fully cooked. Transfer to a plate, cover with foil, and let it rest for 5 minutes before thinly slicing across the grain.
Place the egg in a small saucepan of cold water, bring to a boil over high heat, then reduce heat to medium and gently boil for 7 minutes. Drain, cool under cold running water, peel, and thinly slice.
1. Preheat the frying pan over high heat. Cook the bacon, stirring occasionally, for 5 minutes or until crispy.
2. Meanwhile, preheat the grill to high. Toast the baguette slices for 1 minute on each side or until golden.
Assemble the chicken, egg, croutons, and lettuce elegantly on a platter. Pour over the Caesar dressing and top with crispy bacon. Serve promptly for the ultimate freshness.
