Transform leftovers into a mouthwatering second meal with this genius recipe.
Ingredients:
  • 36.40 gm olive oil
  • 800g chicken mince
  • 2 medium brown onions, finely chopped
  • 1 medium red capsicum, diced
  • 3 garlic cloves, crushed
  • 15.00 gm ground cumin
  • 30.00 ml ground coriander
  • 2 x 400g cans red kidney beans, drained, rinsed
  • 3 x 400g cans diced tomatoes
  • 20.00 ml dried oregano
  • 1 tsp dried chilli flakes (optional)
  • Steamed white rice, to serve
  • Fresh coriander, to serve
Instructions:
  • In a large, heavy-based saucepan over medium-high heat, sizzle half of the oil. Brown the mince in two batches for 8 to 10 minutes, stirring to crumble, until cooked through. Then, move to a bowl.
  • In the same pan, heat the rest of the oil, then sauté the onion and capsicum until softened, about 5 minutes. Add garlic, cumin, and coriander, and cook until fragrant, about 1 minute. Mix in the cooked mince, then add beans, tomato, oregano, optional chilli, and 1/2 cup of cold water. Cover and bring to a boil, then reduce heat and simmer for 30 minutes. Uncover and simmer for an additional 15 minutes until the sauce thickens. Enjoy!
  • Plate up a generous portion of the flavorful chili con carne over fluffy rice, and top it off with fresh coriander. Store the remaining chili con carne in the fridge for later enjoyment.
