Ingredients:
  • 350g penne rigate
  • 400g chicken thigh, diced
  • 200g mushrooms, sliced
  • 400g canned crushed tomatoes
  • 252.50 gm light cream
  • 20.00 ml garlic, crushed
  • 1 tsp chilli, finely diced
  • Pepper, to taste
  • 125.00 ml parmesan cheese, freshly grated, plus extra, to serve
  • 1 chicken style stock cube
  • Parsley, finely chopped, to serve
Instructions:
  • Cook pasta in a pot of boiling, salted water until al dente following packet directions.
  • Sauté garlic, chili, mushrooms, and chicken in a large hot pan until chicken is cooked through. Stir in tomatoes, cream, parmesan, pepper, and chicken stock. Simmer for 5 minutes. Add cooked, drained pasta and simmer on low for an additional 5 minutes.
  • Top off with freshly grated parmesan and fresh parsley.
