Chicken chimichangas

Exciting quick Mexican dish.
Ingredients:
  • 2 x 250g pkts Uncle Ben’s Express Mexican Style Rice
  • 6 flour tortillas
  • 1/2 Roast Chicken, skin and bones removed, meat shredded
  • 40g baby spinach leaves
  • 1 large avocado, halved, stone removed, peeled, thinly sliced
  • 200g drained roasted capsicum, finely chopped
  • 1 shallot, trimmed, thinly sliced
  • 40.00 ml chopped fresh coriander
  • 21.00 gm fresh lime juice
Instructions:
  • Cook the rice according to the package instructions.
  • Lay out the tortillas on a clean work surface. Distribute the rice, chicken, spinach, and avocado evenly onto each tortilla. Fold the sides of the tortillas to wrap the filling and create a tasty parcel.
  • Preheat a large non-stick frying pan over medium heat. Cook half of the parcels for 1-2 minutes on each side until they turn golden brown. Place them on a plate and continue with the remaining parcels in the same way.
  • Mix together the bell pepper, green onion, cilantro, and lime juice in a bowl. Drizzle the mixture over the chimichangas.
