Try our healthier baked chimichangas as a delicious twist on the traditional deep-fried version.
Ingredients:
  • 485g Burrito Kit
  • 4 small chicken breast fillets
  • 1 small red capsicum, deseeded, finely chopped
  • 3 green shallots, chopped
  • 250g pkt cauliflower rice
  • 140g (1/2 cup) refried beans
  • 100g (1 cup) grated 4 cheese melt
  • Sour cream, to serve (optional)
  • Lime wedges, to serve
Instructions:
  • Preheat oven and grill as directed. Line a baking tray. Coat chicken with burrito spice mix in a bag. Transfer to tray, spray with olive oil. Grill each side 3-4 minutes until golden. Cover with foil and set aside.
  • Heat a non-stick frying pan over medium heat and lightly spray with oil. Sauté the capsicum and shallot for 2-3 minutes until slightly softened. Add cauliflower rice and cook for 3-4 minutes until tender. Remove from heat, season, cool, and divide into 8 portions.
  • Slice the chicken thinly. Microwave 2 tortillas on High for 20-30 seconds. Spread 1 tablespoon refried beans on each tortilla, then add cheese, chicken, and cauliflower rice. Fold the tortillas to make parcels, place seam side down on a tray. Bake for 15-20 minutes until golden. For a softer texture, wrap in foil before baking. Serve with sour cream, mild Mexican salsa, and lime wedges.
