Creamy, healthy chicken pasta ready in 20 minutes. Family favorite, low in calories and gluten free.
Ingredients:
  • 450g chicken breast fillets, halved horizontally
  • 500g zucchini noodles
  • 125ml (1/2 cup) light cream
  • 80ml (1/3 cup) chicken style liquid stock
  • 20.00 ml fresh dill leaves
  • 40.00 ml chopped fresh chives
  • 30g baby spinach, to serve
  • 30g parmesan, finely grated
Instructions:
  • Heat a large non-stick frying pan over medium-high heat and spray with oil. Season the chicken generously and cook for 2-3 minutes on each side until golden and fully cooked. Set aside and keep warm.
  • 1. Heat oil in a pan, then sauté garlic for 30 seconds. Next, add zucchini noodles and stir-cook for 1-2 minutes. Pour in light cream and chicken stock, then simmer for 1-2 minutes until zucchini noodles are just tender.
  • Combine the sliced chicken with the sauce, dill, and chives. Serve in bowls and top with spinach and parmesan.
