Quick and healthier creamy pasta bake, perfect for busy families. Ready in just 10 minutes!
Ingredients:
  • 300g cauliflower, cut into florets
  • 125ml skim milk
  • 20g grated parmesan cheese
  • 115g penne pasta
  • 2 bunches broccolini, cut into 3cm lengths
  • 300g cooked skinless chicken breast, poached, shredded
  • 125g, cherry tomatoes, halved
  • oil spray
Instructions:
  • Preheat your oven to 180°C and gently coat a 1 litre (4-cup) baking dish with oil spray.
  • Combine cauliflower and ¼ cup (60ml) milk in a large microwave-safe bowl. Microwave, covered, on high (100%) for 6-7 minutes, stirring halfway, until tender. Blend mixture with remaining milk, 2 tablespoons parmesan using a stick blender until smooth. Season with salt and pepper.
  • While the pasta is cooking according to the packet instructions, throw in the broccolini for the final 2 minutes. Drain.
  • Combine the pasta mixture and chicken with the cauliflower mixture, then transfer to the prepared dish. Arrange cherry tomatoes cut-side up on top and sprinkle with the remaining parmesan. Bake for 20 minutes until bubbly and tomatoes are wilted. Let it cool for 5 minutes before serving.
