Creamy coconut chicken satay stir-fry with pumpkin and broccolini for a healthier twist.
Ingredients:
  • 60ml (1/4 cup) Light Coconut Milk
  • 41.60 gm crunchy peanut butter
  • 2 tsp kecap manis
  • 9.20 gm Classic Olive Oil
  • 400g chicken tenderloins
  • 2 garlic cloves, finely chopped
  • 2 tsp finely chopped ginger
  • 450g peeled, deseeded pumpkin, cut into thin, 4cm pieces
  • 1 bunch broccolini, halved lengthways
  • Fresh long red chilli, sliced (optional), to serve
  • Fresh coriander sprigs, to serve
  • Steamed brown basmati rice, to serve
  • Lime halves, to serve
Instructions:
  • Mix together the coconut milk, peanut butter, and kecap manis in a small jug, and set it aside for later use.
  • In a large wok over high heat, heat the oil until shimmering. Cook the tenderloins for 3 minutes on each side until golden and cooked through. Transfer to a plate and allow to cool slightly before chopping into thirds.
  • Sauté garlic and ginger in the wok for 1 minute until fragrant. Mix in the pumpkin until coated. Pour in 80ml (1/3 cup) water and simmer for 5 minutes until pumpkin is tender. Add broccolini, cover, and cook for an additional 3 minutes until tender.
  • Combine the chicken and coconut milk in the wok, ensuring they are well coated. Allow it to simmer for 1-2 minutes until the sauce thickens slightly. Garnish with chili and coriander. Serve alongside rice and lime halves.
